We must go back to 1343, to the time of King Philip VI of Valois. The latter generalized a tax on salt throughout the kingdom, called the salt gabelle. As a result, the price of salt increased significantly and salted butter gave way to sweet butter. However, Brittany was exempt from this tax and salt remained a cheap product. Thus, the production of salted butter continued and Breton cooks added it to caramel.
